Blue Bunny® Round Slice Vanilla Flavored Ice Cream and limoncello lemon curd between two lemon sugar cookies, rolled in white chocolate chunks and lemon zest.

Instructions
- Dip the bottom of both cookies in limoncello.
- Top the first cookie with a Blue Bunny Round Slice.
- Spread the lemon curd evenly across the second cookie, then place it on top to form a sandwich.
- Roll the cookie sandwich through lemon zest white chocolate chunks, pressing to adhere.
- Transfer to the freezer for service.
